Beautiful Article by Lois

Last Sunday, we went to a dinner party at our friend Anthony's house. I brought miniature brie bites filled with raspberry preserves, wrapped in crescent rolls, then covered in maple syrup and brown sugar (bake for about 15 minutes at 350 degrees)....they were an easy and popular appetizer! Anthony made the most flavorful meat lasagna, plus these extremely beautiful macaroons! He even made the pasta...I was super impressed and it was a really fun night :-)

On Monday of last week, Matt and I went to watch the OSU buckeyes BEAT the Oregon Ducks downtown with a bunch of friends. The game was so thrilling and it was so exciting when we won!

On Tuesday I made homemade turkey meatball, ravioli, and veggie soup! It was a hit, and the leftovers lasted forever.

On Thursday, we hit up the Denver Rodeo with our friends Kerry and SJ. My favorite part of the rodeo is when the little kids attempt to ride sheep--it's hysterical and so cute!

On Saturday I was able to see my friend Emily's new condo for the first time! It's so perfect for her and I'm seriously jealous of how amazing her location is!

Saturday night, we went out to Pub on Pearl with a bunch of friends to play pool, drink beers, and hang out--it ended in a few rounds of beer pong!

Sunday was the most relaxing day ever. Matt and I watched "Boyhood" which is an incredible movie shot with the same actors over the course of 12 years (fiction)...I really loved it! We also ordered delivery BBQ from Brother's for lunch--their chicken sandwich is on point...didn't really love their baked beans though.

Monday, I had the day off! I spent the morning running errands, going to lunch with Matt at True Foods, running more errands, doing laundry, and essentially getting nearly every damn thing checked off of my "to-do" list! I also stopped a few Voodoo donuts by Emily's house and by Matt's work--these are the most insanely yummy donuts I've ever seen or tasted.

I even purchased a coffee maker for the first time...and made a cup of decaf coffee!

Monday night, I whipped up a lemon-blueberry loaf. It's a bit on the lemon-ey side, but everyone that has tasted it so far has really enjoyed it! Recipe

Monday night this furball (Peanut) and I watched The Bachelor....I'm not a huge Bachelor watcher, but this season I've gotten into it. I personally think Chris is keeping around some crazies that are definitely not right for him...but it is entertaining television. I kind of wonder if he will truly find the woman he is going to marry on this show.

Tuesday night, Matt came over and we made a bbq chicken & veggie simple and delicious. I used a thin-whole-wheat-crust that I purchased at King Supers...and bbq sauce as the base. Sautee cut up chicken breast, a yellow pepper and red pepper, plus half an onion--add in a bit of bbq sauce...then top pizza crust with mixture....sprinkle on some Cheddar Cheese or whatever kind of cheese you like! Throw in the oven for about 15 minutes and voila!

I also kept up our trend of trying bottles of Pinot Noir from the Oregon/California area for around $15-$20, with this bottle of A to Z Oregon Pinot Noir...really enjoyed this one, however our favorites are still La Crema Pinot Noir ($24 range) and Parker Station Pinot Noir ($13 range)--also really love Ponzi Tavola Pinot Noir if you're looking to spend around $30 bucks! We finished the night off with two games of pool and a game of ping pong...have to say my ping pong game is a LOT better than my pool game!

It's snowing here in Denver today and looks gorgeous from my office 30 some stories up in the sky! I'm really looking forward to a relaxing night and a good workout!

Turkey-Meatball, Spinach, and Ravioli Soup!

I have been reading a lot about the SkinnyTaste cookbook and website, so I decided to surf it for a bit yesterday to find a yummy, comforting, yet healthy recipe to cook for dinner for Matt and I last night.

I settled on the turkey-meatball, spinach & ravioli soup (*note, I substituted ravioli for tortellini, because the ravioli had a fraction of the sodium) and it did not disappoint! It was cold and snowy out last night, so this was not only really filling, but delicious and soothing.

It took about 45 minutes total to make from start to stop, but I made a double batch so as to have lots of leftovers for the week.

First step is to make the meatballs...

Then I chopped up celery, carrots (i used baby carrots b/c they are pre-peeled), and onion....and sauté that in butter in a large pan w/garlic (watch so as to not burn!)...then I added in 3 jugs of low-sodium chicken stock....and brought that to a boil...after which you season with Pepper...then carefully drop in the meatballs into the boiling water...drop the heat to medium...and let cook for about 5 minutes....stirring every so often....then add in the ravioli for a few minutes....then the spinach...then serve with a sprinkle of parmesan cheese (or any blend of that).

I served with some French bread and it was delicious! I will be eating leftovers in a few hours for lunch :-).

Happy 2015 y'all! 2014 was an amazing year for me, but I truly think that this new year will bring a lot of joy, fun, and experiences! I'm looking forward to having my best year yet.

In 2014, this guy and I started dating officially (do people say that after a certain age? haha) and it's all been very exciting! We have so much to look forward to in the upcoming year--having just come off an awesome 5-day ski trip with my Dad and brother already...we are on our way to Cabo with my parents in March...then to Italy & Paris in the fall together :-) a few weddings and other trips this summer! He's the best and I'm so lucky to have met him.

I also met some really great girl friends in Denver this year (some I knew from college and had just moved to Denver, others were brand new additions to my life). I Am SOOO grateful for these friendships and they have made Denver feel much more like "home". I already have such wonderful and close girl friends from home and from college that i'm so thankful for, but having really close girl friends here in Denver is super important and vital for my happiness!

I'm also really looking forward to three close girl friends' weddings this year! My good friend Mae (we both live in Denver) gets married in May, my bestie Elaine gets married at the end of May, then my other college bestie, Christyn, gets married in July! So I am going to get to see a lot of my friends this year, especially my college girls who i don't get to see nearly enough since we live all over the place. I can't wait to celebrate my girl friends and their soon-to-be husbands!

I also can't wait to hit up the ski mountains every weekend!!

On NYE, I got out of work around 2pm...and ran some errands getting ready for my dad and brother to arrive for our ski trip. I met up with Matt around 6 and we met up with our friends Meredith and Kevin for drinks at The Green Russell. Afterwards, Matt and I met up with friends at another hole-in-the-wall bar by his house and shot pool and drank beers to ring in the new year. It was low-key and perfect!

The next morning, I picked my dad up from the airport and headed up to ski Keystone...later in the night Matt and Alex met up with us at a condo in Silverthorne/Wildernest, CO. We spent the next few days skiing Beaver Creek/Vail/Keystone/and Breckenridge. We really hit up all the slopes, had some great dinners, and hot tubbed it! My brother, who hasn't been snowboarding in 8 years, really did great on the slopes too--it was surprising ;-).

It was a white-out at Vail one of the days--so awesome skiing the back bowls!

I made a shitload of sandwiches for the mountains for lunches...

We also watched a highly exciting Ohio State Game!! We started off at Keystone bar, then headed back to the condo...while we were in the car, Ohio State really turned things Dad jumped for joy when they won...and Matt did too (he got his MBA there)--Alex and I were also very excited since it was SUCH good college football!

I wore the Homage shirt that M gave me to watch the game!

All in all, I'm a little exhausted from a busy ski week--but it's back to work! the boys are in town until Thursday, so I took them to a delicious dinner at Acorn last night--it was amazing!

I thought it was pretty funny they had a beer called "Nightmare on Brett" and "St. Bretta" :-)

Peanut is very happy having her papa and uncle alex in town (i'm a weird cat's official)!
