Spiralizing!!

You Guys. I'm obsessed with my vegetable spiralizer!!! My mom gifted me one, and it has taken my immersion blender's place as my favorite kitchen gadget. It's amazing what spiralizing vegetables into noodles can do to make them more palatable...and for lack of a better word, fun!

I have been following "Inspiralized" on Instagram, and recently started reading her blog click here --I'm so thankful for having found it. She is a serious innovator in the kitchen...and all of her recipes are made with spiralized vegetables of some sort--it makes them feel like pasta...without the havoc to your waistline. Her recipes are incredibly flavorful...and this particular one I made on Saturday night for Matt and I didn't disappoint--it also didn't require me to shell out money on lots of ingredients--I already had the majority of them in my pantry/fridge!

Zucchini "Spaghetti" with Crispy Prosciutto and Roasted Cauliflower in a Creamy Lemon-Parmesan Sauce  <-- for recipe click there & for more of her awesome recipes!

Ingredients
  • 2 cups cauliflower florets
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon garlic powder
  • salt and pepper, to taste
  • 2 garlic cloves
  • 1 large shallot
  • olive oil cooking spray
  • 4 pieces of prosciutto
  • 1 tablespoon extra virgin olive oil
  • 1 pinch red pepper flakes
  • 2 medium zucchinis
  • 1 tablespoon minced parsley, to garnish
  • For the lemon dressing:
  • 1/4 teaspoon lemon zest
  • 1.5 teaspoons lemon juice
  • 1/4 cup plain non-fat Greek yogurt
  • 1.5 tablespoons grated Parmesan cheese
  • salt and pepper, to taste
Instructions
  1. Preheat the oven to 450 degrees. Line a baking tray with parchment paper and set aside.
  2. Toss the cauliflower in a medium bowl with the olive oil, garlic powder and season with salt and pepper. Lay the cauliflower out on the prepared baking tray and roast for 20 minutes or until easily pierced with a fork and lightly browned.
  3. While the cauliflower is roasting, combine all of the ingredients for the lemon dressing and set aside. Mince the garlic and shallot and set aside. Spiralize the zucchini, using Blade C and trim the noodles.
  4. Place a large skillet over medium heat and coat with cooking spray. Lay in the prosciutto slices and cook for 3-5 minutes or until crispy. Transfer to a paper towel lined plate and set aside.
  5. Allow the skillet to cool down for at least 2 minutes and then place the skillet back over medium heat and add in the olive oil. Once oil heats, add in the garlic, shallots and red pepper flakes. Cook for 30 seconds or until fragrant and then add in the zucchini noodles.
  6. Cook, tossing frequently, for 3-5 minutes or until zucchini noodles are al dente. Add in the cauliflower and crumble the prosciutto over the skillet, with your fingers. Give a toss and then remove from heat and stir in the Greek yogurt mixture. Toss to combine thoroughly and divide into bowls. Sprinkle with parsley, to garnish.







TA-DA!!!!!
 
 
  I loved this dish so much, that I made it again on Sunday night for dinner--with leftovers for lunch on Monday & Tuesday!!! It's healthy, delicious, low-sodium, low-carb, low-calorie...but so flavorful!
 
Next Up: Tonight I am using my spiralizer to make "Sweet Potato Spaghetti" for her Sweet Potato, Roasted Onion and Quinoa Bowl with Tahini-Maple Dressing recipe!!!
 
 


I'll let y'all know how it tastes--but I doubt we'll be disappointed! Trying to keep it up with fresh meals and great workouts through this holiday season!

Weekend Recap

I had such a fun weekend this weekend, filled with lots of activities plus some snow!

On Friday, I went to my friend Emily's house for a girls night filled with Cheese & Wine.

I bought this Parker Station red blend from Sonoma Valley--such a good find for around $17!


Meredith's pup, Piper, hung around with us gals....she is an angel and so sweet!



On Saturday, Matt and I made breakfast, and then I went condo shopping with E. She is looking for a 2 bed 2 bath...this one wasn't quite right for her, but it was really awesome! It made me so excited about having a place of my own one day!


We also hit up the nail salon during a full on snow storm...thankfully my nails dried fast so I didn't have to walk out in flip flops in 2-3 inches of snow! I got "Taupe-less" by OPI on both my finger nails and toes...nothing like fresh nails!



On Saturday night, Matt and I, and a few of our girl/guy friends went out for Sushi at Go Fish. It was a delicious meal that ended in sake bombs (not my favorite...but a fun event!)...and then we went out to bars on Broadway. We are lucky to have such fun friends!

On Sunday, I took a quick nap with Peanut...then headed to Friendsgiving with Matt. We brought my family's Sausage stuffing recipe, and it was a hit :-).


We also used a little bit of the sausage stuffing to make an omelet that morning! It was randomly delicious.


There was the CUTEST 8 week old Doberman/rotweiller mix puppy...I held him for a solid hour...here his dad has him in his sweatshirt pocket!!...he fell asleep in there :-)


Matt's good friend from work, Eric, fried the turkey and it was glorious! It was so juicy (sorry that's gross)! We are doing another friendsgiving on actual thanksgiving...love the holidays!

 
After Friendsgiving, we watched "Love Actually" (which is on Netflix!!) and I passed out early with my kitten on my shoulder! It was such a fun weekend, but I'm definitely feeling a head cold coming on. Will be chugging Vitamin C and taking airborne for the next few days to hopefully fight this off!

Have a great Tuesday! It is finally winter here in Colorado--at least I think it's here to stay! Today I walked into work in 10 degree weather with snow flakes falling from the sky. While it's not really sticking here in Denver, I think the mountains and ski towns are getting hit pretty well, which is what I like to hear.  I'm not that thrilled that I went from jean jacket to parka in 2 days, but that's how Denver does it!
 
Also want to give a BIG thank you to all of our amazing Veterans. The sacrifices soldiers and their families make for our freedom are truly exceptional and courageous. I am overwhelmingly thankful for each and every day I get to walk around feeling safe because of you.  I know I am lucky to live in the USA!

Weekend Recap





I forgot to take any pictures this weekend!

On Thursday after work, Matt and I started watching the show Salem on hulu, it has become a straight up addiction for us--we watched 5 episodes alone on Sunday! I really recommend it :-).


On Friday after a long day at work, I met my girl friends Emily, Kelly, and Meredith at the Thirsty Lion for a few cocktails. It was fun to catch up and see the girls!

On Saturday morning I had to wake up early for a doctor's appointment, but that at least enabled me to have a full day! After the doctor's, I went to the mall and shopped the Anne Taylor sale, I picked up some really cute coated skinny jeans! They are super comfortable and flattering.


On Saturday night, Matt and I met up with friends to watch the OSU vs. Michigan State game at Hayter's. It was a longgggg night, but was super fun. I had a stomach ache for like half the night, but it ended up being a really good time despite!

Sunday morning we went to brunch at Pete's Café, then posted up on the couch for like 5 hours watching Salem. It was a relaxing but very necessary day!

Weekend Recap

Hope y'all had a great Halloween weekend, I sure did!

I had a pretty busy week last week, and ended up on Thursday night at Joanne Fabric, twentieth in line (you read that correctly) waiting to get red tulle cut for my Halloween costume for our Halloween party on Friday night.  Never again will I wait that last minute! Thankfully, by the time I got to Matt's that night, he had already cleaned out the "gook" inside our pumpkins, so they were ready for carving! Nothing says romance like your boyfriend cleaning out your pumpkin gook for you! haha. We also made my costume...much easier to make with two people!



Our pumpkins turned out amazing...I pretty much just supervised this activity as I Suck at pretty much anything art related!...





On Friday after work, I got dressed in my costume--which required multiple staples to really fluff up....and transformed into a Loofah bath sponge!


Matt was pretty creepy and wore this skeleton costume!

We then had a bunch of friends over for appetizers/drinks/partyyy....shockingly every single person came in costume! There were some good ones too! We ended up going to a bar at the end of the night, as well as another Halloween party, so it was a late Friday night!




On Saturday, I ran errands, worked out, and then we met up with Brian, Meghan, Eric, and Kate to celebrate Kate being in town from Ireland! It was a really fun night spent at Tag, Osteria Marco, and the Green Russell....another late night as well!


Sunday I spent the day napping, brunch with my girl friends Emily & Laura, working out, and then at night Matt and I went to see John Wick (movie)....it was pretty decent, given that Keanu Reeves was the star of the movie, however they kill a puppy in the movie and it made me SO sad :-(.


Also, if you're looking for the most killer pumpkin cookie recipe...see below, my friend's mom is responsible for this amazingness...I need to make them myself soon!
