Weekend Recap & Matt's 31st birthday!

I had the best weekend! First of all, it was about 75 degrees and sunny the entire time, and second of all, we celebrated my awesome boyfriend's 31st birthday!

On Friday night, Emily and I hit up her friend, Laura's housewarming party. Their place was so cute and the food spread & drink spread was amazing. A total grown-up housewarming party! We also played lots of fun games, including the card game "Asshole"--which I ended up learning how to play that night, and winning! #humblebrag.

On Saturday morning, I met up with Meredith, Emily, Rachel, and Trent for lunch on the rooftop of Vita. Their rooftop is amazing, and I'm not sure why it wasn't packed--the food is even pretty decent, and the carafs of mimosas for $5 really should seal the deal....

On Saturday afternoon, I picked up Matthew's ice cream cake (Reece's Pieces Blizzard Ice Cream cake from DQ for anyone particularly interested!) for his birthday night. Meghan and Brian just moved-in together, into a really awesome (and perfectly decorated!) home and were having a housewarming party, so it was a good way to get friends together for both their housewarming, as well as Matt's birthday! They were sweet enough to hang a Happy Birthday sign for him! After the party, we all went to a sports bar in wash park to keep celebrating....karaoke may or may not have been sung ;-)

It was such a fun weekend then ended last night in dinner at Duo & presents (I got him a Jawbone Up and an Ohio State homage t-shirt). They have awesome food and such a cozy atmosphere all for a good price. Ironically enough, we went on our second date there last year on October 27th! hah...and we actually were sat at the same window table again last night.


Only suckass thing that happened this weekend was... I got a flat tire :-(...at least it was only 1 tire and at least I have the type of tires that you can drive 40 miles (so you don't have to pull over and change it on the highway etc.) so I was able to get my car to the dealership this morning for a tire change. Hopefully I'm scotch free for another 4+ years on tires though! (ran over debris from an accident on the highway last night)


Lastly, our friend Eric sang karaoke at the bar, and god he was entertaining! He is actually a good singer...but at the very end an older lady went up and sang with him, that's where things got amusing!



PPS. Matt made the best Rum-Apple Cider at the housewarming party...and those are uncooked hamburger patties that tasted amazing!



Also, I picked up this bottle of wine on Friday at World Market...around $18...tasted awesome!

Turkey Meatballs, Homemade Veggie Tomato Sauce, and Spaghetti Squash!

Last night I cooked up a nice fall meal! While it's still about 75 degrees here in Denver (not that I'm complaining!), I wanted to make a healthy comfort meal.

I started off with a basic tomato sauce: In a pot sautee garlic, 1/3 of a chopped onion, 1 chopped green pepper, and 1 tablespoon of parsley (and pepper to taste--I didn't add salt, but you can) in some olive oil. After a few minutes, add in sliced mushrooms (I used 1 pint, but you can use less). Let these cook until the green peppers start to get softer...add in 2 cans of No-Salt-Added Oregano & Garlic Tomatoes (I got mine at Safeway). Then add in about 2 tablespoons of Tomato Paste. Let that come to a simmer and voila you have a delicious but basic sauce! I generally let mine sit for a few hours if I have time just so the flavors can really mesh.



While my sauce was marinating on the stove top, I cut a spaghetti squash in half--lightly covered in olive oil, garlic powder, and black pepper....I cook this face down on a cookie tin for about an hour at 400 degrees.

To make my meatballs, I combined 1 pound of ground turkey meat (I use the no-seasoning kind, in 93% lean), with 1 egg, fresh garlic, 1/2 cup of panko bread crumbs, 1 tablespoon parsley, black pepper, 1/2 cup of freshly grated Parmesan cheese.....mix together....then add in a tiny bit of lukewarm water....next, roll into meatballs, everything should stick together. I baked my meatballs at 400 for 25 minutes on oiled tin foil....I then folded the meatballs carefully into my sauce for like 20 minutes while shredding my spaghetti squash into "spaghetti"....





We served ours with a piece of Texas Toast!

Next time, I might make the tomato sauce in advance, then bake the meatballs day-of to save on time!

Pumpkin Picking!

Even though the weather was nearing 80 degrees yesterday, we had a great "Fall" weekend full of happy hour, movies, and pumpkin picking with friends!

On Friday night, Matt and I met up with my friend Elise and her boyfriend, Steve, for drinks at a bar in our neighborhood! I had met Steve once before, but it was great to grab happy hour and get to know him a bit better--they are a great couple!

On Saturday morning, Matt made me French toast and I got in a good workout.



Later in the afternoon, we went to see my two best guy friends' movie, FISHING WITHOUT NETS, on the big screen at Alamo Drafthouse. This was such a cool moment! I've been really good friends with Cutter (director) and Rafi (producer) since the 6th grade, so I was really proud to see that all their hardwork has paid off--they won Sundance for their film, which then went on to become a feature film through VICE...and I believe that 20th Century Fox purchased their movie...and now it is playing in theaters around the country. Such a dream come true for them...and the movie was AMAZING. So glad I got to see it!!!





On Saturday night we continued our marathon of movies, with Underworld, The Proposal, and Pride & Prejudice.

On Sunday...it was off to Anderson Farms in Erie, Colorado for pumpkin Picking and fall fun! We picked out some pumpkins and will be carving them next weekend! There were SO many people at the farm, and it was a really awesome Sunday activity that I hope to do again in the future.

It was such a fun day spent at the farm, but my allergies went nuts!! I literally came home and passed out at 7pm and didn't wake up until 7am this morning--feeling MUCH better thankfully....Peanut enjoyed cuddling all night :-)

Mushrooms & Pasta

Such a delicious recipe! Made this last night for dinner. Only thing I would change is not cooking all the pasta they tell you to...so many leftovers, and I also kind of wished there had been more mushrooms-per-pasta bite, which could be solved by less pasta! Will be trying this over spaghetti squash next time!

Weekend Recap

I spent a lot of the weekend helping my boyfriend move into his new spot (mostly just unpacking/packing boxes)...his new place is soo nice and has such an awesome new view of everything!


We went to True Food for dinner on Saturday night, and I got the bison burger wrapped in lettuce, it was amazinggggg! I absolutely love the kale salad you get as a side as well...you basically just feel like you're eating a whole lot of ruffage but it all tastes amazing!

On Sunday, I worked out, ran errands, and made my first batch of Veggie Chili of the season. It was really dreary and gross out here in Denver, so it was the perfect Sunday to just get stuff done around the house as well as curl up in a blanket.  I make a super easy chili...put a little olive oil in the bottom of your pan...throw in one chopped green pepper, 1/2 chopped onion (I don't pre-cook), add in 2 cans of no-salt-added diced tomatoes, 1 can of no-salt-added black beans, 1/2 can of no-salt-added corn, and then 1 bag of Boca Crumbles (imitation meat). Stir together, add in some chili powder, black pepper, and basil...cook on low for 3 hours (or until green peppers are cooked to your liking)---stir every once in awhile if you're home. I'm obviously not a vegetarian, but I really like how easy this is to make and how yummy it tastes...


I packaged that up in Tupperware for easy & healthy lunches this week!

I also gave myself a manicure with this pretty light pink/purple Essie color (can't remember the name), and watched like 3 hours of Law & Order: SVU...my guilty pleasure!

 
I started reading the most interesting book last night as well, Super Freakonomics...definitely recommend it so far...simultaneously I am reading the book, Wild...I should probably have finished Wild before starting this, but couldn't help myself!
