I've had a pretty stressful past week, I've been trying not to over-think things too much, but I have a zit on my chin and anxiety seems to be keeping me awake at night....I finally got in a really great run last night and it made my body feel a bit at ease. I've decided that at the end of the day, what I'm stressed about is not going to matter. So I just need to move forward and not think too much....but this past week, I really have felt as though this would solve all the problems in the universe....

Just kidding! But how cool would that be hah :-).
Tonight I'm going bowling and going to hopefully roll some strikes & spares, and this weekend I'm heading to Vail for a night then to one of the Denver Derby parties with my girl friends! I can't wait to dress up...I still need to find a head piece/ or hat!

This is always a good idea!!

Weekend Recap

I have had such crazy weeks the past two weeks. I really needed to slow down, breathe, sleep, and relax this weekend. I definitely accomplished that goal! On Thursday night I went to a new (to me) sushi restaurant in the Highlands called SushiHai. The food was pretty delicious, though we ordered far too many rolls! Afterwards we met up with others at Matador.

On Friday after a very very long week at work, I was supposed to grab dinner with my friends Kelly and Bridget, alas Kelly had to stay late at work so we all rescheduled for next week. I took this as a sign from the universe that I should get a side salad & baked potatoe from Wendy's for dinner, and watch Netflix and cuddle my Peanut all night.  I got a great night of sleep!

On Saturday morning, I worked out, then decided to lay out on the deck at my apartment complex for a bit while reading my book. It was such a glorious and sunny day out!

I also made a 2 egg + boca burger scramble for lunch...kind of an interesting mix, but it was really yummy!

That afternoon I hit up the mall and walked away with two dresses for my friend Stephanie's wedding weekend--which is in a little under 3 weeks! Can't wait to see all my girls! Then I hit up the grocery store.  I generally stay away from anything processed, however I was interested when I saw Progressive's Recipe Starter pouch for Stroganoff. It only has about 240mg of sodium per serving and about 45 calories per serving--not perfect, but really NOT bad for something premade.  I added in chicken (instead of beef), and egg noodles (plus a little sour cream as the recipe calls for)...and voila i had a pretty yummy dinner! Next time I would probably add in some fresh cut mushrooms, onion, and garlic to just up the taste. But super easy!

Saturday night, I decided not to go out, and just watched a few movies and lounged! It rained on Saturday night/Sunday pretty hard (unusual for Denver) so I surprised myself by sleepin in until almost 10:30am on Sunday morning.

I also have become obsessed with this new salad kit--BBQ-Ranch Summer Salad...don't use all the crunchies and don't use all the dressing...and there you have it, your greens for the day!

I like to eat my salads out of bowls biggers than myself...tastes better!

Sunday I ran a few errands, worked out, stopped by Target to spend a gift card, and Facetimed with my Dad right before his bike ride!

It was a perfect weekend in terms of relaxation...a girl needs that every once in awhile!

Weekend Recap!

Goodmorning, Monday! I'm actually happy to see you this week as I have a dinner date tonight with one of my best friends from college, Elaine, who is flying in for a few days to attend a work conference! I cannot wait to see her, take her to one of my favorite restaurants, catch-up, and squeeze her (oh, and creepily try on her engagement ring since it's the first time I've seen her as an engaged woman!! haha).

I also went up to the mountains this weekend-- On Saturday morning after Scott got back from doing rounds at the hospital (he's an Anesthesiologist), we all geared up and went to ski Beaver Creek. The. Snow. Was. Awful!! We got so much snow this winter, so I was pretty shocked that most of it had already melted--kind of what I imagine skiing on mashed potatoes would be like. It also sprinkled a bit, with the sun peaking out for moments throughout the day. But, it was still very warm, and I was able to ski in a tank top & unlined jacket that was pretty cool.

Saturday night, John & Jen ended up coming up, so the 8 of us hung out around the house and ordered a bunch of pizzas for dinner & all ended up staying way past our bedtimes watching outrageous ski videos on Youtube. Some people are insane with what they are willing to do for a kick of adrenaline!

On Sunday, Vail hosted the Pond Skimming Championships (where people on skis and snowboards ski down a hill over a small jump, and try to skim across a pond of water....most fail and fall right into the's fun to watch!) which we watched after eating some lunch. It was my first time seeing something like this, and since it was a gorgeous day in Vail, it was even more fun to watch!

Sunday night I got home to my Peanut and we watched some tv and hung out.
A fun weekend! Can't wait to see my girl Elaine tonight!

Weekend Recap

Well I have just been so busy latley that I haven't really been posting on the regular as often, I hope to get back to daily posting here soon!

Last Thursday night, I kicked off the weekend with a dinner at Root Down (farm to table restaurant) with my friends Emily & MaryBeth. All three of us went to Miami together, and I hadn't seen MaryBeth in ages and it was great to catch up! It was also my first time at Root Down--the food was tapas-style, and we shared a few really great things.

On Friday, my office hosted our Spring All Hands Meeting at the Denver Aquarium. It was a great meeting and so fun to see some of the fish after the meeting...

After the Aqarium, I hit up happy hour at The Kitchen...then Zengo...then finally Linger for dinner with a bunch of was a long but fun night that ended in a late-night party. Don't worry Mom, I didn't drink that much, I just stayed up ridiculously late. I slept a lot of the day on Saturday after brunch at Second Home and a workout.

On Sunday, I woke up feeling really refreshed and ready to take on the day! I went to breakfast with Emily, Lunch with my friends Nicki, Elise, and Kellie...then went to go see Divergent! Which by the way, I definitely recommend. 

Yesterday after work, I ran a few errands, cleaned the shiz out of my apartment, got in a solid workout that I am still sore from today...and made some whole wheat pasta with shrimp & brocolli for dinner.

Looking forward to purchasing my bridesmaid dress tonight for my friend Cara's wedding later this summer & getting in a long run!

Weekend Recap

I had a pretty great weekend and I'm sad it's Monday & that it's gross and cloudy and nearly raining here in Denver today. I wish I could be lounging in my bed taking a nap with Peanut and watching movies all day instead of at work, but at least I love my job!

On Friday night after work I worked out then I went to dinner with my buddy Dustin from Semester at Sea who I hadn't seen in so many years. It was great catching up with a friend & hearing about all his success these past few years. We went to this delicious restaurant called True Food in Cherry Creek which is now my favorite restaurant--I am literally craving it right now. They have a to-die-for Kale Salad, which is something I never thought I'd ever say--their bison burger is probably the best thing I've ever tasted as well. So many flavors!

On Saturday morning, Peanut woke me up early! I went to get coffee with my friend Emily and then got in a good run outside. Saturday afternoon I went to the mall, ran errands, and basically just started to get my life in order as my apartment was a disaster from so much recent travel! I also stopped by the grocery store and picked up a few things to make a rotisserie chicken sandwich...which turned out delicious...

On Saturday night, I painted my nails purple (to represent) and headed off to meet my friend at the Rockie's baseball game. We had awesome seats right 2 rows behind the dugout and while it sprinkled a little bit, we came back 3 runs in one inning and ended up winning by a landslide! While I'm not a die-hard baseball fan, there is something about being at the stadium that just feels like summer, and that feels good! On Sunday I worked out, did a ton of laundry, and hit up Ale House for the balcony & Vita for dinner. Great weekend all around!

As Of Late

I have had a pretty busy week at work, and a really fun week as well! On Monday night I hit the gym for a great workout, on Tuesday night I went to dinner at Second Home in Cherry Creek with a friend--I got the Chop Chop Salad which actually didn't end up being that good, but they do have a really pretty ambience with an outdoor fire pit that you can see from inside the dining room.

Last night, I met my friend Emily for dinner (we ended up sharing a few delicious appetizers) at TAG downtown, and then we went to the Green Russell for a specialty cocktail after dinner. The Green Russell is this saloon-like bar and I think it's a gem in Denver. We had a really great time, and while I feel great this morning, I'm a tad bit tired :-).

this was wildly amusing to us hah.

Tonight I meeting my friend Dustin from my Study Abroad program (UVA's Semester at Sea--which was unbelievable) for dinner to catch-up on old times! It's been years since we've seen each other so it will be great to see a familiar face!

Today is also opening day for the Colorado Rockie's, our professional baseball team, so I'm expecting to see a sea of Purple when I walk around downtown at lunch! I love summertime & baseball is a huge part of that "summer time feeling"--even if you don't make it to many of the games!

5 Things I'm Loving Now!

1) Emma Watson at the premiere of Noah. I mean seriously, could she look more beautiful, and that dress is classic perfection.

2)This striped mini-skirt has such a great fit and is super comfortable. I love the combination of these two colors for spring as well. Would look fantastic with a basic white t or tank. GAP

3) I FINALLY finished the book GONE GIRL by Gillian Flynn when I was in Mexico, and believe me it was worth it. Such a fantastic book, I just purchased her other novel "Sharp Objects" and can't wait to start it this weekend.
4) I know I'm a little late to the party....but I recently realized, through a friend of my Dad's, that I have a flashlight on my iPhone....and it's already there, you don't have to download an APP to use it. I have been using it all the time recently! It's the little things...really.

5) World Market has amazing furniture at great prices! While I personally am not buying any new furniture until I buy a condo one day, I am loving these dinning room staples...
