As of Late

I've been busy as a bee this past week & haven't gotten to le old blog in the past few days. Work has been crazy, and I'm startin to feel VERY READY for my vacation to Mexico that's coming up in a few short weeks. Sittin at my desk just isn't as much fun as sittin by the pool sipping on a Corona if you catch my drift!

Last Friday I went to a new-to-me bar in my neighborhood called Punch Bowl with some of my friends! It's a bar that incorporates a great food menu with a great drink menu as well as bowling lanes, ping pong, and other games. It was such a blast even though I kind of sucked on the bowling lane! I loved how active the bar was. Ohh and we shared a few different things for dinner, including the chicken & waffles...holy moly best C&W I've had. The lighting in the bar made for some interesting quality pictures.....














On Saturday morning I slept in, then got in a great workout, and hit up Cheeseman Park for a little reading since it was a gorgeous day. The parks in Denver are the best because there are hundreds of the happiest pups you've ever seen prancin' around! There is nothing better than a smiling dog.



On Sunday, Erica and I went to brunch at The Hornet. They have a solid bloody mary bar with all the makings. I stuck to a mimosa, and I'm pretty in love with the cocktail glasses they serve them in. Though, as my friend Stephanie pointed out, these types of glasses look gorgeous but tend to make your cocktail warm before you finish it due to the way you must hold the glass.




The rest of Sunday was pretty relaxing after a workout and a nice nap.

This week so far, I went to dinner on Tuesday night with my friends Brie & Caitlin at this great new Italian restaurant by Coors Field called Amerigo Delicatus. The food was fantastic and the company even better! We had such a great girls night....and by the end of dinner there was 2-3 inches of snow on the ground as well. I swear Denver weather is all over the map recently...though it's 55 and sunny today, so I won't go complaining!

Last night for dinner I made myself a goat cheese grilled sandwich with a little vodka tomatoe sauce to dip it in...delish! Sometimes a girl just needs an easy, simple, but delicious dinner...


In other news, Peanut thinks she owns this side of the bed...she is such a human when she sleeps it's a little ridiculous...but gosh do I love her sweet face!



Tonight I am going out for my friend Emily's birthday bash...then tomorrow I'm waking up at the crack of dawn to hit up the ski slopes with the girls for a bachelorette party! Should be a really fun but exhausting weekend, and I'm sure come Sunday I'll be ready to snuggle up and watch season 4 of Parenthood...seriously if you haven't started watching this show...get on it! You'll shed a few tears...but really love it.


I also wanted to wish my best friend in the entire universe, Tory, a VERY happy 26th birthday tomorrow!!! You've been the cheese to my macaroni since we were just babies, and I don't know what I would do without you! Love you!

weekend recap!

I had a great weekend...but I'm not exactly thrilled to be one of the few Americans working today, President's Day :-)..at least when I look out my work desk window, it's sunny and cloudless for miles and miles!

On Friday night, Valentine's Day, my friends Elise & Nicki had a few of us over for a delicious dinner of seafood stew! I always have a great time hanging with these ladies, and brought my brie appetizer dish...which was demolished!

Elise was cracking me up with her "faux jeans" that had an elastic waistband & faux-pockets (which by the way you couldn't tell were "faux-jeans" and looked incredibly comfy)....as well as with that TINY cheese-grater!



After dinner and great conversation...I headed back home to my cute little Peanut and we fell asleep pretty much right away...we woke up on Saturday morning and dove headfirst into the second season of House of Cards...which btw, is thrilling so far!


So, I worked out and then spent most of Saturday being a lazy person...much needed! Saturday night I met up with my friends, Mae, Erica, Carson, Emily, Sam, Matt, Claire, and Claire's husband for drinks at Carson & Matts' house first followed by a delicious dinner at El Camino's (mexican restaurant). I pretty much judge mexican restaurants solely based off of their queso...and this one didn't dissapoint! It was a really fun night spent with sweet friends :-)





On Sunday morning, I slept in until 10am...then I decided to go on a little run...which turned into a 2 mile run then an additional 6 miles of walking around Denver...I even walked all the way to Wash Park and around it...there were so many people out at the park playing volleyball, walking their dogs, rollerblading, and running. It was 65 degrees (in February!!), sunny, and a perfect way to spend a few hours. I felt so much more alive after this walk & getting to spend time in the sun...it beat the winter blues out of me!

On Sunday night I cooked up an easy dinner and spent time with one of my best friends. Here's to a great week full of sunshine :-)

How You Rock V-Day Single!

I've never really been one way or the other about Valentine's Day. I guess I kind of always thought you should be nice to your significant other every day? But, as a person who loves love, I figure, sure, it's nice to celebrate your boo in a really obnoxious Hallmark-way once a year...

 

I guess, this year being single, I am just not quite looking forward as much to the constant ANNOUNCEMENTS of 'OMG LOOK WHAT THE HUBS/BOYF/LOVER GOT ME!!! OMFG'...followed by a 24-hour photo montage of flower arrangements at your work desk, blue Tiffany's boxes, chocolates, and dinners for two on social media.....

Enough!
 
 
I mean it's as though your brain might literally explode if you see one more chocolate-covered strawberry post....

Random!

Last night I had some girl friends over for stuffed peppers (on the left that's a veggie version with Boca Crumbles and on the right with Chicken sausage in it) and sides for dinner & girl talk. We had a great night, and I'm so lucky to have these girls in my life!





Today I woke up to the East Coast cheering "snow day!"...umm, we don't get snow days off from work out here in Denver...but I'm not exactly complaining, this week it's supposed to get up into 60's! Maybe Spring is just around the corner...but I'm not entirely convinced, guessing we will get more snowfall in the next few months!



And this little guy is just my all time favorite picture I've found this week...I mean really, I need him in my life!...jk Dogs are a LOT of work...but that face...

 
 
I just plan on getting in some good workouts the rest of the week, eating dinner at Elise and Nicki's house tomorrow night, and spending some time outside and with friends the rest of the weekend! Think I will be taking a weekend off from skiing to enjoy the Spring-like weather :-).

Shrimp & Chicken Sausage Jambalaya!

Last night, I made this ridiculously tasty Shrimp, Chicken Sausage, and Bell Peppers Jambalaya recipe by Serena over at Domesticate-Me Blog.  Every recipe of hers that I have tried to recreate has turned out A+! It is made with brown rice so it's a bit on the healthier side, and I went with Pacific Organic No-Salt-Added Chicken Stock to really keep the sodium levels down!...It is so flavorful from the spices, and got really great reviews by my taster. Make it y'all, you won't regret it---oh and side note, after you do a few minutes of chopping, you really just let it simmer in the pan so it takes practically ZERO effort on your part!










VOILA!

 
 
 
Ingredients:

2 tablespoons olive oil
6 ounces Andouille chicken sausage, diced
½ Spanish onion, diced
½ each green, yellow and red bell peppers, diced
2 cloves garlic, minced
1 can diced fire roasted tomatoes (14.5 ounces)
1 tablespoon plus 1 teaspoon smoked paprika
1 teaspoon oregano
¾ teaspoon cumin
Pinch of cayenne pepper (or more, depending on how hot much heat you can handle)
1¼ cup brown rice
3½ cups low-sodium chicken stock
1 pound large shrimp, peeled and deveined

For garnish:
4 scallions, thinly sliced
¼ cup fresh cilantro, chopped

Preparing your Jambalaya:

-Heat 2 tablespoons olive oil in a dutch oven or large saucepan. When hot, add the diced chicken sausage and sauté for about 4 minutes until lightly browned.
-Add the onion, bell peppers and garlic and cook for 3 minutes until the vegetables are just tender and the garlic is fragrant.
-Add the diced fire roasted tomatoes, smoked paprika, oregano, cumin, and cayenne pepper and cook for about 3 minutes until the mixture is simmering.
-Mix in the brown rice and cook for 1 minute before adding the chicken stock. Bring to a boil and then lower to a simmer. Cover and cook for 50 minutes until the rice is tender and most of the liquid has been absorbed.
-Mix the shrimp into your jambalaya, cover and cook for 5 minutes until the shrimp are cooked through. (Cooked shrimp are bright pink and opaque, people.)
