Thankful A Day Early

Thanksgiving week at work had been surprisingly much more busy than I otherwise would have thought it would be. I'm really ready for today around 3pm to roll around (heard a rumor we may close the office a few hours early...cross your fingers for me, I have a pie to bake today!) and to have a few days off work to just relax, eat, and have some fun with friends!

This Year I am So Thankful For So Many Things.

I am so very thankful for my family, without which I would be lost! I have the world's best big brother who, while sometimes incredibly irritating, is always there for me when I need his support. I'm so lucky to have a sibling, because really, other than your parents, your siblings are the only people who really "belong" to you in the world. Alex, you rock.

My Mom and Dad are simply the greatest parents I could ever wish for, they offer me nothing but love and support, and have provided me with the opportunity for the greatest experiences I have known in my life. I know there is no greater bond than that of child and parent, and I am so desperatley thankful that I have the privledge of being their child. I appreciate that my parents shaped me to be a kind and loving person, those are the traits I am most proud I possess. Love you guys, I know you're my main blog readers ;-).

I am so thankful for my girl friends as well. While we may live 5 minutes or thousands of miles away from each other at any given time, we are always connected by the laughs, tears, joys, and outrageously fun experiences we have shared over the many years. I feel fortunate to have such strong female bonds in my life, without these women my life would shine MUCH less brightly. I love you girls!

I am thankful for snuggles from my warm baby kitten Peanut--she is the best roomie! I am thankful that Freckie found his place in Kitty Heaven peacefully this year, and I'm thankful to for providing so many heartwarming pictures of animals :-)--which really help you to get through a rough day!

I am so thankful that my health has been decent this year, and that I continue to hold out hope for peace in the future.

I am thankful for the roof over my head, a great job that I like, easy to get along with co-workers, peace of mind, and...a relatively new person in my life who makes me smile a lot! I am thankful that I get 5 weeks of PTO to visit with family & friends each year, and for this upcoming ski season. I am thankful I get to spend the week of Christmas at home in a few weeks.

I am thankful for a resilient heart and clear mind, and the laughs I get to experience with people I love. I sure am blessed.

Finally, I am thankful that I didn't mess up the sausage stuffing recipe that I made last night for my Thanksgiving--stuffing for 10 people, I had maj pressure hanging over me, had a sample last night and it turned out yummy!

Seth Rogen as Kim Kardashian

It's Monday at noon already! I can basically already taste the sausage stuffing I'm going to be devouring in the next few days during my Friendsgiving! Anyone else think that stuffing is the best thing on the table?....besides the turkey I suppose!.....This weekend was pretty jam-packed but I also took some time out to just kick back and relax.

We had our first real snow day late last week, and boy was it beautiful. I am starting to get the major itch to take my skis out!

On Friday night I went to go see Dallas Buyer's Club at this little independent theater in my neighborhood. The theater was absolutley packed, and for good reason...this movie is fabulous! Jared Leto is the standout star of this flick, though Matthew is very very good as well. It was shocking to see how skinny these stars got for these two parts, but it really made you believe they were in fact dying of AIDS....I'll admit it, afterwards we were starving and hit up the Denver Dinner for a turkey sandwich...a milkshake may have been shared too hah....

On Saturday morning I hit up a Holiday Expo at a convention center here in Denver with my girl friends Carson & Mae. We had the best time, and I scored some really great Christmas gifts!...and also an American Flag Scarf which is pretty much the bossiest thing I now own! Afterwards we went for brunch at the Denver Biscuit Co. which was awesome! I had the Shrimp & Grits Biscuits--was way too big to finish! They have the coolest bar stools in this place, and I really want them for my own casa.

On Saturday night I decided to take a bubble bath and relax, I also facetimed with a friend. It was nice to just sit back and relax, though I definitely would have been down to go out if anyone else had wanted to. It's getting pretty cold here, so I think that may be making everyone hibernate a little more than usual.  I also watched Safe Haven on Netflix, which was cute!

Sunday morning I woke up feeling quite refreshed! I worked out, cleaned, did laundry, and hit up Target for a few last minute Thanksgiving essentials! I also make meat sauce and a lasagna for dinner...and a banana bread with some "dying" bananas...both were pretty yum...though next time I'd use an 80% lean ground beef...instead of 96% lean! Would taste better in the sauce I think.

Santa Baby!

E) Or some OLAY Complete Day Lotion with SPF 15 for Sensitive Skin is something I used on the Daily and love (and it's under $10/bottle and found at any drugstore):

I'm probably the world's easiest person to shop for presents for since I'm incredibly girly and tend to love a lot of different things! I would be happy with pretty much anything this year if dear old Santa does decide to grace my tree!!

Dude Diet Chicken Cutlets & Zuchinni "Pasta"

Last night I cooked up The Dude Diet's Chicken Cutlets & Zuchinni "Pasta" with Cherry Tomatoes Via.  First off I love Serena's DOMESTICATE ME! blog, and her recipes are definitely healthy, delicious, and importantly--Dude Approved! They are also extremely easy to replicate--win win if I do say so myself.

Chicken Cutlets:

2 thinly sliced chicken breasts, aka chicken cutlets (about 7 ounces each)
6 ounces non-fat Greek yogurt
½ teaspoon salt (I Omitted this)
¼ teaspoon garlic powder
½ teaspoon dried basil
½ teaspoon dried oregano
1/8 teaspoon ground white pepper (I Omitted this)

For the breading:
1 cup whole wheat Panko breadcrumbs
2½ tablespoons grated Parmesan cheese
¼ teaspoon salt
½ teaspoon dried basil
½ teaspoon dried oregano
1 pinch cayenne pepper

I couldnt find chicken cutlets in my grocery store, so I sliced Chicken Breast down the middle to make it thinner...easy peasy (and a disgusting picture)...preheat that oven to 350 degree F.

Next I made my marinade by combining the Yogurt, garlic powder, basil, and oregeano in a bowl. 

Mix that shit up real good

Let these suckers marinate in that zesty sauce for about 30 minutes in the fridge:

Combine your Panko breadcrumbs (I used the Panko that does NOT have seasoning in it to cut down on Sodium) with your Parm, Cayenne Pepper, Oregano, and Basil--I added in a touch of black pepper and skipped the salt (though I'm sure it would amp up the recipe if you can use salt)--I put my mix in the bottom of my cookware dish...

Cover those badboys in that breading mix (I had some leftover breading that I scooped out and put in the trash):

Now place those yummies in your already pre-heated (to 350 degrees) Oven and let it bake for about 25-30 minutes (until fully cooked).

For the Zucchini Pasta:

2 medium zucchini, sliced into thin ribbons (I used a knife to do this)
1 tablespoon plus 1 teaspoon extra virgin olive oil
1 small shallot, minced
2 cloves garlic, minced
1 dry pint cherry or grape tomatoes (I like to use a mix of red and yellow), halved
2 tablespoons freshly chopped basil

About 10 minutes into your baking of the chicken, start on the Zuch Pasta...heat up a large saucepan with a little olive oil, butter (just a tiny for flavor), and garlic (I used pre-minced)....

Next, add in your diced tomatoes:

After the Tomatoes are getting soft...add in your Zuchinni strands and let those cook about 4 minutes until tender.

Pull your glorious chicken out of the oven (25 minutes-30 minutes of baking should do the trick but you may want to cut one in half just to make sure)....and place on top of the Zuchinni & Cherry Tomatoe pasta...sprinkle a little Parm cheese on top....I also added a little tomatoe sauce (canned) that I had in the fridge on the bottom of the plate...was a nice touch if I do say so myself!

Eat that fresh & healthy plate of food and then fall into a deep sleep with your cuddle bug...
