Crock Pot Creamy Mexican Chicken (aka best thing you've ever tasted from a crock pot!)

While at the grocery store last night I decided to pick up the ingredients make this DELICIOUS Crock Pot Creamy Mexican Chicken recipe.  I underestimate my crock pot's abilities, but after this dish, I will definitely be using it a whole lot more.  While I ate this plain over nothing last night for dinner (it was that good!), I could see it being delicious served over rice or egg noodles!...Enjoy :-)

(*Note: I used 4 thinly sliced non-frozen chicken breasts....and used only a sprinkle of Fajita mix which I had on hand, to keep things lower sodium....I also used no-salt-added canned Black Beans, so-salt-added canned corn, no-salt added organic diced tomatoes, orange & green pepper, no olives, only 1/2 the jar of salsa since I also added in tomatoes, and about 1/2 a package of cream cheese instead of full)....





(Note: corn on the cob didn't go into this dish...I ate it while cooking!)









I took the chicken out at this point and shredded it with a fork, then put it back in the mix....then added in the cream cheese and stired that around....creamy perfection..


So, now I get to enjoy this dish for lunch & dinner for the next few days :-)

Steven Tyler in Drag?

It's been a super busy Monday back in the office...the below picture really caught me off guard...while in reality it's Taylor Swift & Carly Simon singing together....I swear to God, the initial reaction I had when first looking at Carly Simon was, "Did Steven Tyler dye his hair blonde and throw on a sparkley skirt?"....seriously, that mouth. My weekend was incredibly low key--mostly attributed to the rainy, grey, and cold-ish weather we have been experiencing the last few days...kind of loving it, not going to lie! I miss Fall weather (read: fall clothes) after such a hot summer so far...though not to be confused, I am still dying to get back to the beach house for another weekend at the end of August!

One of my co-workers is out on vacation this whole week, making my workload double, so that's never fun. Hoping the rest of the week comes and goes fairly easily though!

While it rained outside this weekend, I got down and deeply into House of Cards (a Netflix original series)....it's based just outside my hometown, in Washington, D.C., and is political and juicy. I love it! I finished the entire first season which probably can give you a hint to how unproductive and lazy I was this weekend....though I did do an at home gel-manicure which turned out really well...and went on a 3 mile run around Cheesman Park and my neighborhood when the weather started to clear up....



Last night I hit up a really cute neighborhood pizza place in Wash Park called Kaos Pizzeria....their outdoor patio is super cute, and their pizza is very gourment and yummy...definitely recommend South Pearl Street area for a fun Denver experience for meals! We shared this pizza that had potato, pesto, cheese, and even an over-easy egg all cooked into it....very unique but great. I love trying new places, and exploring in new neighborhoods!


Now going to get my ass to the gym tonight so that I can run off that pizza :-)

Bradley Cooper's Girlfriend Wears Scrunchies....so I bought Scrunchies...

I don't have much for you today because it's Friday and only 75 degrees...but can we please just turn our attention to the fact that Bradley Cooper, my idea of what heaven really is, is dating a girl named "Suki"....WHO WEARS SCRUNCHIES in her half-up half down high ponytail....I mean, if someone had told me before that the key to capturing Bradley's attention was dressing like it's 1994...I would have had my Mom pull out my matching leotard & scrunchy combos from gymnastics lonnnnggggg ago?!!?!?!?!.....I just, I just, can't....

Smorgasbord

Good morning Thursday! I am so happy to see you....last night Kellie, Nicki, Elise, Tristan, and I went to Benny's for some mexican food and skinny margaritas to celebrate/mourn Tristan's imminent move to Miami this upcoming weekend. We had a great time, and we're definitely going to miss Tristan here in Denver!!!...We have however, already started planning Spring Break 2014 in Miami!

This morning I may or may not have woken up and eaten a bowl of this for breakfast...Leftovers from dinner the other night....it's actually just a smorgasbord of things I had on hand, but pretty damn delicious, and on the lower end of  the sodium spectrum.....


 
 
Ingredients:
 
2 Handfuls of Penne Pasta (uncooked---looking back, I would probably cook them for 6 minutes in boiling water first, then toss them in the casserole to finish cooking the rest of the way)
1/2 can of no-salt-added yellow corn
1 can of organic no-salt-added tomatoes
1/2 of a chopped vadalia onion
1/2 bag of Boca Cooking Crumbles (veggie "meat")
Handful of shredded mozzerella cheese or whatever else you have around
 
Instructions:
 
Just toss all of the ingredients in an oiled casserole dish...and cook on 375 for around an hour...delish & easy!
 
 
 
Now on to more recipe ideas since it's 9am on a Thursday and I went to bed a little past my bedtime, so nourishment idea stalking it is...
 
 
Biscuit Pizza
 
While I would probably never actually make this...it's a cute idea, and incredibly easy...would be a great appetizer to cook up for a football tailgate...or even a Sunday night movie night meal....okay, I would probably make this the more I think about it....
 
 
 
 
Stuffed Peppers
 
I will be cooking this up for dinner tomorrow night as I bought 5 red peppers at the grocery store the other day and have a 1 pound bag of quinoa I've never opened waiting for me in my pantry to use...sub in no-salt-added canned black beans and microwavable steamed corn and this is a really easy recipe to make!...and makes a perfect next-day lunch in my opinion...but I'm kind of all for bringing leftovers as lunch...
 
 
 
 
 
In other news, it's only in the high 60's/low 70's here today and cloudy...and in dry climates that means it's practically Fall (until tomorrow when it shoots back up to 100 degrees again)....and it really has me thinking about how much I love fall fashion....this outfit would be pretty perfect to wear...
 
 
 
 Now if I could just have it be 5pm already and be heading back home to take a nap in this sanctuary I would be a really happy girl...

Monday Obsessions

1.  I am loving this Gap plaid Henley Tunic! It's the newest version of the comfy plaid button up...but way more chic. I personally would wear this all the time considering half my town lives in plaid! Very cute mountain gear! Via







2.  This Rebecca Taylor blouse is such a pretty color combination and print! I love how it looks almost tie-dyed...and the cut is perfect for summer over white skinny jeans! Via

5.  This Halston Heritage dress is such a stunning orange. I love the unique structure of the dress with the swingy circle skirt and fitted bodice--the V-wire neckline also adds interest. This would be a fabulous dress to wear to a summer wedding! Via
 
 

6. This woven Joie beach tote is perfect for a day by the water. I'm loving this bright baby blue color, the chevron print, and it seems like it could fit all I need for a day by the pool/beach....I'd probably use it as more than a beach tote too! Via

7.   I saw the Melissa McCarthy and Sandra Bullock movie, The Heat, the other week with my Dad while on vacation at the beach...while the plot isn't all too stimulating, it is really funny, and Melissa is a comic genius I think! A good and fun summer flick that requires little thinking--perfect for a hot summer night!

Weekend fun

Last night I had an epic nap that spanned from 4:30pm all the way through to 8am this morning. Sometimes a girl just needs to sleep!...I've been out a lot the last few weeks, and probably needed the rest. Thursday night I met up with a friend for drinks at Williams & Graham--awesome speak easy in the highlands. We then hit up Linger for dinner--which is by far my new fav restaurant in town! The food was insane good!

This morning I met up with my friends Mae and Erica for a yummy brunch at the Ale House in LoHi. I had eggs over a biscuit...soo good! The view was almost as good as the company :-). Tonight I'm
heading out for dinner at a Mexican restaurant...still figuring out what to wear, but looking forward to it! Happy weekend y'all :-)

Weekend Recap!

This weekend was incredibly busy but fun. Friday night I went to dinner with a friend at Cru--a winebar in downtown Denver, for wine & appetizers. I was really impressed with their beet appetizer.

I got home pretty late, and fell right to sleep alongside this little cutie....



On Saturday morning, I worked out, ran some errands, grabbed a bagel at Moe's with a friend, and then headed to the Sloan Lake area of Denver for a birthday party for my Miami girl, Mae--which was so much fun! I met a bunch of new people, and really had a great time.


We took shots of fireball from a shooooe (aka a boot shotglass).....

On Saturday night after Mae's party, I was feelin pretty tired from such a busy day, and was in my PJ's when my friend called to see if I wanted to hang out and get some froyo...what kind of girl passes up froyo?...not this one!

On Sunday, I woke up fairly early as I had a doctor's appointment...then worked out....and went to drinks with another friend at a bar called Riever's in a really cute neighborhood called Wash Park in Denver during the afternoon... I wore this $10 dress from H&M--a total steal and soo comfy:


After drinks I came home and started watching Game of Thrones on Netflix...pretty interesting show so far.


Then, this morning it was impossible to get out of bed, especially after I looked out the window and saw this dark, dreary, rainy sky...I hit snooze a few times, then basically ran to work!...

Things I've Learned in 25 years

1) Being hungover and/or exhausted at work absolutely is not worth it. Unless they're playing Benny & The Jets at the bar...then go ahead and take the shot of fireball at midnight....and dance on the bar with your girl friends. You always have next week to remember not to drink that extra margarita on Thursday night before work Friday.


2) Spend a few extra dollars on that bottle of wine you're picking up...it will make a world of difference the next day when you're not puking your guts out...better yet, drink the beer instead.


3) We all want to lose those last 5 pounds...but at the end of the day, take care of yourself and eat well enough, but those last 5 pounds really mean NOTHING. Who cares, rock that booty. Guys like a little bit of ass. On the same note, get to the gym, you'll feel better about yourself.


4) When you're single, go on as many dates as you want, with as many different guys as you want. Even if the guy is too short, too tall, too young, too old, not quite your usual cup of tea...you never know what you're going to find, so just say yes if you're decently attracted to them and they have health insurance (a great job, education, and bod doesn't hurt either hah). And maybe you'll figure out eventually that the last guy who dumped your ass really wasn't your guy. Dating will make you a better and more interesting person, and also remind you that you're a hot commodity. Plus, free drinks/dinner and good conversation are never a bad thing. Stroke that ego.


5) Do things on your own. Doing things on your own helps you to realize who you are. Independence is also a very attractive quality to have--don't depend on anyone else for your own happiness. Obviously doing things with others is a lot of fun...but going on a solo hike, or a solo weekend trip to someplace new, is very healing, and can set your priorites straight. You won't get all the answers, and you'll never know why things happen the way they do, but if you can be happy on your own, then I believe you don't settle for anything less than what you're worth.


6)  Note: This is 100% NOT from personal experience (though from a friend's personal experience)....never, ever, ever hookup with your boss or anyone that has any authority over your career. Even if he's relatively young, hot, successful, and you two are drunk at the holiday party without dates....just say no. If you've seen Brigit Jones Diary, you know how this will end.....though I'd say, definitely get drinks with that young, hot, successful boss if you've recently quit that job and already started a new one, and happen to run into each other at a mutual friend's wedding....why the fuck not.


7) Always go to the wedding. There is really nothing better than a wedding. Food, flowing booze. etc...forget the fact that your plane ticket was $1,000 and the hotel was $500.


8) Remember to tell the people that you love, that you love them.


9) Remember how amazing your parents are. Especially when you are approaching the age that they were when they had you....that will really bitch slap you into reality....give them a gold star and cut them a break, because could you imagine raising you at the age of 30? Absolutley not. Gold star.


10) You should spend an entire paycheck on a really great handbag that you will take care of and love for life. Nothing pulls together a look like a great bag.....and yeah, you might not be able to eat for a few weeks, but that's a small price to pay for a classic.


11) On the same note...don't get the credit card. Spend within your means, shop within your closet, and remember--financial stability is the way to a happy and less stressful life. Your future husband doesn't need to be paying off your online shopping habit, so cut that credit card up. You can look fantastic in a Forever21 dress, Aldo shoes....and okay, an entire paycheck handbag.


12) Take all of your vacation days at work. Travel and see as much of the world as you can. Take a day off from work even to just explore your city.


13) Always dress professionally at work. You do NOT want to be the girl that people talk about behind your back because your bra was hanging out...or you exposed your shoulders, didn't brush your hair, look like you rolled out of bed every morning (I have worked with "that" girl and you honestly want to ask them why they think birkenstocks are okay to wear in a corporate environment?). You can be the best person at your job out of everyone at your company, but if you don't look as put together as your work is, you will suffer some consequences.


14) Highlights seem like a good idea at the time but then are a lifetime of upkeep...wait until you get grey hair, then dye the shit out of that mane.


15) Drink water, wear sunscreen, and get 8-9 hours of sleep and you'll feel like a million bucks.


16) Snapping your gum or chewing with your mouth open is inexcusable and disgusting.


17) Be glad you studied hard in college...though to be honest it probably won't really matter after second job out of college.


18) Make as many great girl friends as you can. I've learned that nothing is better than time with my best friends. Treasure your friendships with the women in your life...men are wonderful, but girl friends are your true soulmates and pull you through everything.


19) Be nice to your siblings. Even if they are seriously obnoxious half the time, they are the only people in the world who really belong to you...and they may have to take care of you at some point in your life so always better to build some good karma!!


20) Pets make life happier. Peanut and Freckles are two of the great loves of my life! And the best cuddlers ever! They will love you unconditionally.


21) It's okay to sometimes just need that third piece of pizza, that third glass of wine, and that third hour of Law & Order: SVU. You can have more fun on your couch then out sometimes.


22) Get your heart broken a few times. Nothing better than a broken heart for really fucking you into your senses...always be kind with other people's hearts too.


23) Nothing a week in Mexico on the beach can't heal.


24) Give people second chances sometimes...and always forgive them. But move forward and don't dwell on what might have been for too long. Some people walk into your life and make a huge difference in it, then walk out without much of an explanation....the explanation wouldn't have made it hurt less...move forward.


25) Do something that terrifies you...like singing kareokee, taking a stand up comedy class, or even just saying hello to a stranger on the street...it will give you the little kick of adrenaline you need to know you're actually living.


26) Be present. Because the past is over and the future is still being created.

Obsessions

1) This blue & white tie-dye cutout maxi is so fun for summer, and would really make your tan pop!

2)  This Tribal Print Shift Dress is such a pretty mix of pinks, creams and blues. I'm not sure how flattering the shape would be on, but it does look very comfortable and the perfect amount of flow for a hot summer day. The length also makes this easy to dress up or down.

3) These Steve Madden slightly wedged "Flipper" shoes are pretty much everything I want in a shoe. A little height, and a bold but simple statement. I love the gold and black and versatility of these shoes.

4) Speaking of shoes...these Zara "E-Strap" heels are amazing. The colors, the structure, the heel...summer perfection, and so fun!

5)  In the summer, a gauze scarf can really spice up an outfit without adding too much heat. I love this J.Crew one--the citrus, white, and navy really come together perfectly. I would stick this in my purse and save it for an overly airconditioned restaurant.

6) This Linen dyed sweater is perfect for a summer night or an afternoon by the water. I personally think hot pink can be pulled off by any hair color/complexion, and this classic would be a staple in my closet.
