Christmas & NYE!

My week at home was fantastic! I love having my family and girl friends around me, and we had a lot of laughs and fun together! Went to a fancy dinner with my best girl Tory on Saturday night at DC Coast restaurant--was so delicious and I got the crab cakes! Tor got the prime rib I believe and both tasted great. We ended up hanging at her apartment afterwards with a glass of Cabernet, and had lots of fun girl talk!...Sunday I went to a bar called Spider Kelley's with my best friends during the day and watched the Redskins play--to be honest we talked the entire time and didn't really pay much attention to the game--we had a lot of catching up to do though, so it was much needed. Sunday I went Christmas gift shopping with my dad and got a few last minute things for under our tree, and we cleaned up the house (or helped my mom!) for our annual Xmas eve party the following night. XMAS Eve was fun as always, saw a bunch of my favorite people and favorite families, and its so nice to host a tradition that so many people keep coming back to year after year after year! This is probably my favorite night of the year, and I am so thankful my parents host it every year! The rest of the week flew by, but I spent a lot of time with my friends which was great! I stopped by the mall one afternoon and picked up a cute pencil skirt from Banana Republic for work--at a great price of $30! I also purchased some new Nars Laguna bronzer and a little pot of Nars lip gloss which I'm loving because its a little thicker and therefore I'm thinking it will last longer. I am also thinking of purchasing a Clarisonic skin brush, as my girl Nora has been using one and her skin looks fab! Haven't gotten up the courage to spend $140 on one yet, but I think it would be worth the investment since everyone swears by them for perfect skin--anyone have experience with the Clarisonic--such as which one to purchase? On Friday my dad and I arrived back in Denver, and met AJ and friends up at the ski house in Silverthorne for a weekend of skiing on Saturday morning--it was soooo good to be back with my handsome man! We skiied both days at keystone and had an awesome time--let me point out that my Dad is actually a better skier than me! We also were able to reserve a 2 bed 1 bath new apartment for a February move in date in Denver--woohoo for a guest bedroom! Now our friends and fam will be more comfy when they come to visit--can't wait to get started on decorating! Last night back in Denver, my dad cooked up a yummy dinner of turkey burgers, brocolli, carrots, and mashed potatoes which we devoured while watching the Redskins beat the Cowboys!! Looking forward to ringing in the new year tonight with my two fav guys! We plan on a steak dinner out with my Dad, then AJ and I are going to meet up with some friends! Missing my mama and friends back in VA already! Hope ya'll had awesome holidays too!

Tracey Anderson Method

About to go watch the Redskins game with my best girl friends at a bar here in Virginia (HAIL!!)....but I bought the Tracey Anderson method last night (trainer to the stars like Gwen Paltrow) and tried out the cardio video. While I seriously don't see how any normal human is able to memorize this routine since it feels like she does nothing in repetition and basically just does whatever the F she wants, I am a little sore today, so im willing to try out the cardio and strength videos for awhile! Perfect for traveling at least!

Anyone done this method and have thoughts, suggestions, or testimonials about it? Would love to hear from you!

TGIF!

Well yesterday was not a sweet day at work...I was exhausted that morning, and got a bad case of Vertigo and then horribly sick to my stomach so I had to leave the office to go home. The possitive is that I slept all day, and today am feeling remarkably a lot better! Which is good news since this girl gets to go home to her family tonight!!! woohoo! Really looking forward to a week break from work where I can sleep in, relax, and hang with the family & my girlfriends...really wish AJ's hometown was closer to mine so that we could see each other, or that he was coming with!

Hoping the office will close early today since there isn't much really left to do today!

It's Beginning to Feel a Lot Like Christmas!

It's a winter wonderland here in Denver today! The snow is coming down full force and actually sticking a bit on the ground....it's now a tradition for snow to arrive around the day before I fly out to home for xmas (though last year the night before I flew home for xmas "break", it snowed two feet, and I had to drag my suitcase an entire mile to the office through 2 feet of snow because I was taking the Super Shuttle from work to the airport that evening--miserable!!--thankfully my flight was actually on time!)....this year I don't think we'll get 2 feet of snow here in Denver, but I'm hoping that it's falling pretty in the mountains.  My dad is flying back with me after Christmas to do some skiing--so I'm really hoping for great conditions for us!

Pretty sure that my baby Peanut knows that her mom and dad are going away for the holidays as she has been sleeping between us every night this week!--so thankful for our friend Elise who will be able to stop in and feed her and love on her while we're gone!


We put out our work snowman every year! He puts us in the holiday spirit! His nose fell of this year, so I had to stick it where it wuld fit haha.

PRESENTS!

Work has been incredibly busy the past few days! Really looking forward to Friday when I get a week vacation! Since A.J. and I won't be together over the holiday, we decided last night to open one of our presents from each other--I opened this beautiful, stunning, amazing gold monogram necklace from Max & Chloe! I probably will wear it just about every day  :-). It's amazing how I've gotten into gold and rose gold since I graduated from college--I used to be a strictly sterling silver/white gold type of gal, which I still adore since I wear it the most--but gold is classic for things like monogram necklaces, and I like dainty jewelry in gold. Overall my preference is still sterling silver/white gold, but I knew I wanted my monogram necklace in gold--so I'm really excited with how it looks and turned out!! Thanks babe!

The present from me that AJ opened last night was this comfy and cute Lululemon Men's trainer jacket! He works out a lot so this gift was perfect for him! Since he has broad shoulders, long arms, and a fairly long torso, I got him the XL--it fits great around the middle as their jackets seem to really just get longer with size, not baggier around the middle, and was the perfect fit for a guy of 6'3"...really recommend this gear if you're still looking for presents for your man as it is super comfy & lasts forever! It's starting to snowflake aroud these parts, so I'm kind of hoping that tomorrow is a work from home type of day--going to go ahead and say I just jinxed myself and my ass will be back at this desk tomorrow!

Anyone have any special holiday traditions that they do with their families each year? My family always has a holiday party on X-Mas Eve--which my friends and my parent's friends have been coming to for over 25 years! It's a great time, and really special that everyone spends their Xmas Eve with us each year!

Weekend Recap

We had a great and busy weekend! Friday night AJ went to the Nuggets basketball game with a few guy friends that were in town--I took the night to relax after an insanely stressful work day. Saturday we slept in until 10am--the latest we have slept in ages! Saturday afternoon we drove up to Boulder to one of my girl friend's parent's homes for a champagne birthday lunch for her--it was really fun! Their house was also really beautiful, as well as their neighborhood. AJ has been working hard this weekend on some work, and I finally finished my Christmas shopping on Sunday. Now to wrap and address some holiday cards I need to send out this week. Hoping this week at work goes smoothly--I'm taking on an additional client at work and am really stressed about handling the workload on top of what I currently have--hoping its manageable and smooth rolling after the first few weeks of transition. I meet the client on Friday, so hopefully it goes really well! Cant wait to see my family and friend's in a few short days--though I'll really miss my Peanut and AJ over the holiday!

Gun Laws

My heart and prayers are with the families, friends, teachers, victims, survivors, and community of Newtown, Conn.  What an unfathomable tradgey--how anyone could kill another human being is crazy to me, but to kill children is heartbreaking.  The fact that 30+ and counting have died today makes me honestly wonder about gun laws in this nation. I am a true supporter that yes your constitutionally protected rights should be protected, but something CLEARLY needs to change in regards to gun ownership qualifications in this country. And This change needs to happen NOW! No person other than a soldier fighting to protect our country needs to own an automatic or semiautomatic weapon, do they?! I understand that many hunt for a livelihood, but do hunters even use these types of guns??? While there are things we cannot protect ourselves against in this world, and there are things that we cannot predict, there have been one too many shootings and innocent victims lost because of our culture of violence. Hopefully, our country will get it together and realize that gun laws and the processes for attaining guns, at least on automatic weapons, need to be stricter, IMHO.

Friday Ramblings

Last night's work dinner at The Palm was so delicious! I had the lobster bisque which honestly was too luke warm for me to really enjoy much, but then the main course really made up for it! I had the broiled 15 ounce cold water Nova Scotia Lobster Tail--it was probably the best lobster I've ever had...I really recommend this dish.  A.J. and I decided to get a piece of Carrot Cake for dessert as well, which while we didn't finish (thank God), really set me over the edge! The Palm scenery is quite unique as well--if you spend $50,000 there, or are a celebrity guest, you get your picture painted up on the wall with your name attached. The Partner who brought this particular party to The Palm goes there so often that he has spent enough to be put up on the wall--he's waiting until they get back to a particular room (I guess they rotate) so that he'll be closer to the front of the restaurant, to get added!

Really happy that today is Friday, though I swear it should be Saturday by this point! It's a bit dreary, cold, and grey here today which actually makes me happy bc it may mean snow is falling in the mountains. Next week is my last week until I am home for a full week for Christmas--can't wait to see my family and friends, and to sleep in!

This weekend we have a birthday party lunch for one of my friends, at her parent's home in Boulder--her mom is cooking us all up a fancy lunch, so that should be really fun. I'm not quite sure what else we'll get into, but it will involve a lot of vitamin C, sleep, and relaxation!

Lobsta, Lobsta, Lobsta

I have a super busy day ahead of me with multiple Partners coming into the office today with lots on their plates to handle, and an after-work thank you dinner for AJ (for working so hard on particular projects!) with his lead Partner and a few others at this really amazing restaurant called The Palm. These dinners generally involve copious amounts of incredible food and wine, and I normally feel disgusting for at least 24 hours afterwards....but it's worth it!


I plan on ordering & taking home half with me:

The Lobster Bisque for a starter (which is high in sodium, but I'll only eat a few bites)

Next: I will probably order the Surf n' Turf with a 9 ounce filet + Lobster tail.....in which I will probably eat all of the lobster and a few bites of the filet, and bring the rest home. Or I'll order the Jumbo Cold Water Nova Scotia Lobster Tail 15 ounce.  Life of Luxury I live here haha...

Thankfully I'm wearing a loose fitting dress tonight!!

Thankful it's Thursday, and I have a fun weekend to look forward to with one of my girl friend's 25th birthday parties, potential skiing, and Holiday card writing!

"You Won't Be Single For Long Vodka Cream Sauce"

Last night while my guy was working late, I decided to put on my Rachael Ray hat and pull together one of his favorite dishes: homemade vodka sauce over penne pasta, brocolli, and chicken breast. It turned out so delicious! This dish is called "You Won't Be Single For Long Vodka Cream Sauce"--and for all you already taken ladies, this dish will make your significant other sing your praises!


"You Won't Be Single For Long Vodka Cream Sauce" Via

Ingredients

  • 1 tablespoon extra-virgin Olive Oil 
  • 1 tablespoon butter
  • 2 cloves garlic, minced (I used pre-minced garlic)
  • 2 shallots, minced (I just diced up a little onion I had in the fridge)
  • 1 cup vodka (I used Sky Vodka because we had it in our freezer)
  • 1 cup chicken stock  (I use very low-sodium brands)
  • 1 can crushed tomatoes (32 ounces)
  • Coarse salt and pepper (I left out the salt)
  • 16 ounces pasta, such as penne rigate
  • 1/2 cup heavey cream (I used 1/2 cup plus a large splash!)
  • Bit of dried or fresh basil


  • *Brocolli (as much as you want in the pasta) spears cut up into bite-sized pieces.
    *2 Chicken Breasts (I bought pre-cooked whole chicken breasts at the deli) cut into bite-sized pieces.



    Directions

    Heat a large skillet over moderate heat. Add oil, butter, garlic, and shallots/or diced onions. Gently saute shallots/onions for 3 to 5 minutes to develop their sweetness. Add vodka to the pan--reduce vodka by half, this will take 2 or 3 minutes.





    Add chicken stock & tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.







    While sauce simmers, cook pasta in boiling water.  I also cooked my Brocolli at the same time.







    Stir cream into sauce. When sauce returns to a bubble, remove it from heat.






    Drain pasta. Toss hot pasta with sauce, brocolli, and chicken breast pieces. You may want to top with a little fresh basil & serve with a side salad & bread to soak up the leftover sauce.



    
    2 Whole Chicken Breasts chopped up into bite-sized pieces.
    
    My final product! Swear it tastes amazing!

    NOTE: Sauce seems to thicken after a few hours, which my boyfriend really likes--might be best to cook this dish, then serve hours later, or the next night even! Great for leftovers--Enjoy!
